In my own eating, I am a big fan of the bowl.  Brown rice or quinoa bowls with beans and veggies make up my lunches almost every day, and I love them.

Though I’ve gotten my toddler on board with bowls, I’ve found that patties are a much more fun (and portable) form for her.

These delicious Broccoli Quinoa Patties are a regular in our home, and a huge hit with our toddler.  They’ve got protein, whole grains, and a bright green veggie, making them the perfect kid-food!  You can add all kinds of yummy goodness like beans and more veggies if you like (just add an extra egg if the mixture gets too dry), but they’re also perfect just as they are.

I like to serve these puppies to my little alongside some beans and fruit to make them a complete meal.  For myself, I’ll throw a patty onto a bed of greens and beans to make a bowl-patty hybrid.

These freeze beautifully, and are among my freezer arsenal of quick, healthy, crowd-pleasing meals for the whole family!

Instructions
  1. Cook quinoa according to package instructions. Let it cool.
  2. While the quinoa is cooking, sauté the onion over medium heat until translucent. Transfer to a medium sized bowl to cool.
  3. Add more olive oil to the pan and cook the broccoli florets until it's softened a bit. Let it cool and then chop it up. Add to the onions.
  4. Add the cooked quinoa to the broccoli and onions. Mix in the shredded cheese, and breadcrumbs. Add the egg and mix well. Season with salt and pepper to taste.
  5. Heat up some more olive oil in your pan. Make 1/4 cup sized patties out of your mixture, and place on the pan. Cook over medium heat for about 7-8 minutes per side. Do not allow the patties to burn!
  6. Enjoy!
Recipe Notes
  • To freeze, wrap uncooked patties in plastic wrap and place in a ziplock freezer bag.  Defrost in the fridge and then cook as directed above!
  • Optional add-ins: beans and/or sweet potatoes are some of my faves to mix things up!  If you add beans, these patties become a complete meal.
