This delicious salad incorporates a whole bunch of spring’s detoxifying bounty — from mucous eradicating root veggies, to gut flora restoring probiotic greens, to lymph destagnating berries. Quite literally, the perfect springtime supper for detoxifying, slimming, and energizing the body.
Detoxifying Spring Salad
1 bunch dandelion greens
1 fennel bulb, sliced
1 bunch sprouts of any kind (sunflower sprouts are my fave!)
1 cup organic blueberries
1/2 cup raw almonds, chopped
Juice of 1 organic lemon
2-3 tbsp extra virgin olive oil
1 tsp raw honey
1 tsp freshly grated ginger
Himalayan sea salt and fresh ground pepper to taste
Combine first 4 ingredients in a salad bowl. Whisk together lemon juice, olive oil, raw honey, and grated ginger. Toss dressing with veggies and top with almonds. Salt and pepper to taste.
