Twinkies Are Back on the Shelves.. Why You Should Stay the F* Away!

By: Natasha Uspensky, CHHC

Twinkies Are Back on the Shelves.. Why You Should Stay the F* Away! | The Organic Beauty BlogAfter a brief hiatus, Hostess Twinkies made their (unfortunately) much-anticipated return to convenience store shelves today, and I felt compelled to put in my two cents.  I know Twinkie fans aren’t kidding themselves into thinking a Twinkie is a healthy food option (it’s really not actually even a food item at all!), but the treat has such strong nostalgic associations that they still hold a fond place in the heart of many Americans.  More than most other, equally unhealthy packaged, processed Hostess treats, Twinkies evoke memories of childhood and simpler times.  Maybe dad would let you get one while he filled up the gas tank (don’t tell mom!), or maybe grandma would sneak you one when you came to visit.  Hell, maybe you even grew up in a household where Twinkies weren’t relegated to secret, special status, and you got one in your lunchbox every day.  Along with all the other changes and responsibilities that come with adulthood, comes the begrudging need to eat better, watch your calories, and stay away from trans fats.  So it’s understandable that treating yourself to this symbol of easier times can come with a sizable, if only temporary, emotional payoff.

Now I’ll admit, I’ve never tasted a Twinkie in my life.  I wasn’t allowed to eat junk food as a kid, but even more than that, the weird, somehow alien looking pseudo-food wrapped in clear plastic never appealed to me.  Now, as a holistic nutritionist, I know full well all the reasons why my mother forbade us to eat packaged foods like this, but I realize that even this rationalization isn’t always enough for some.  So I’m going to appeal to your reason AND your emotions, to help you come to the same conclusion.  Eating a Twinkie just isn’t worth it, and it’s not going to make you feel better for long.

They’re not even food!

As evidenced by Steve Ettlinger in his book, Twinkie, Deconstructed, even the “vitamins” listed among ingredients in this pseudo-food are derived from petroleum.  In China.  Yes, that folic acid and what apparently passes for B vitamins amid the 37 ingredients in a Twinkie are derived from natural gas and other industrial ingredients.  Whatever real food ingredients may have at one point been a part of the lab creation of a Twinkie, they have been bleached, processed, chemicalized, and reconstituted beyond all recognition.  Even the water in the water they use is heavily processed and laden with chlorine!

They make you fat and sick.

A Twinkies ingredient list reads like a who’s who of the worst bad baddies in the world of food.  Tons of processed soy (read: carcinogen); artificial colors and flavors (read: super carcinogen); not one but three different forms of sugar (processed, bleached white sugar, corn syrup, AND high fructose corn syrup); all kinds of processed corn products (six in total) that are genetically modified, and contribute to so many people’s mysterious, chronic ailments; and a slew of toxic chemicals.  These puppies are a one-way ticket to obesity, love handles, digestive problems, chronic inflammation, fertility issues, and yes, even cancer.

They actually don’t make you feel any better.

I recognize that many people reading this article know full well of all the horrible effects foods like Twinkies have on their bodies, but in the moment, choose to eat them anyway.  Whether it be a desire for comfort, a nostalgic connection to your youth, or just a quick rush of sugary serotonin, the effects of a Twinkie just don’t last.  You eat it, you get that momentary rush of whatever it is you’re cravings.  And then you go back to feeling like crap.  Actually, you’ll probably feel even worse as your body comes down from that quick sugar rush, or as all those toxic chemical start doing their dirty work, or worse yet, as you start to feel guilty about having eaten something so god awful.  As I say to my clients every day, it’s not actually that Twinkie you’re looking for.  You’re looking for happiness, or comfort, or connection, or FUN.  But I’m sorry to say none of that is found within a Twinkie wrapper.  So instead of even entertaining the notion of eating that piece of non-food, do something to bring up the desired emotion instead.  Call your mom or your best friend from childhood.  Play with a puppy.  Go for a walk.  Dance around.  Laugh.  Any number of actions will actually give you a lasting positive sensation, without all those terrible side effects.

Really craving the taste?  Make your own, healthier version!

How To NOT Lose Friends Over Your Lifestyle Choices

By Callie McBride

“Look who’s off to the gym again.”

“I’d eat as many greens as you, too, if I were a giraffe…”

“At the end of the day, I’d much rather have the cupcake than not.”

0421108cecf06dba899f53555b5f80f1

These and plenty of other comments can be routinely heard from family, friends, co-workers, and people who lead a different lifestyle than you do, and seem eager to judge. In the nearly 3 years that I have been vegan, and in the 5+ years that I have expressed my passion for health and fitness, I have laughed off ‘vegan’ jokes, stomached outwardly opinionated friends, and even held my tongue around certain people who are quite vocal about their disapproval or disinterest in a holistic way of living. Certainly not everyone is as gung-ho about hot yoga and green smoothies as you are, but it can become frustrating when your life choices become criticized on a regular basis and you feel the need to refrain from practicing those choices in order to fit in. Just last week I spent a number of days with a loud, fun-loving family whose only agenda was to lounge, eat, and drink. (I know, I know, where can you sign up!?) Like many families, this one especially loves to come together over a meal, so inviting a girl with a plant-based diet into the home was a challenge for them. Each time they had questions or comments about my lifestyle, I graciously answered and listened to what they had to say. After a while, though, the vegan jokes were popping up 4 or 5 times in an afternoon. “The ribs are on the grill, we know you can’t wait!” “We made this cheesecake special for you-oh waaaaait.” My personal favorite: “So, you’re vegan…like, where do you find joy in life?”

If you’ve ever done grade school theatre or participated in a kindergarten beauty pageant, you know how exhausting it is to hold a fake smile. Unfortunately, that’s what I felt like I was doing. While I recognize that the digs and comments are all in good fun, I quickly felt that I stood out like a sore thumb every time the dinner bell rang. It got me thinking that no matter what life choices a person makes, if they stand out from what’s considered the ‘norm’, it can be tough to live out those choices in a social setting.

If you can’t beat ’em, join ’em.

In an effort to remedy my feelings of frustration and inconvenience toward people who don’t understand why I eat the way that I do, I have compiled a list of ways to inform without lecturing, extend invitations without pressuring, and constructing rebuttals without starting World War III.

1. Share your snacks. A fool-proof way of convincing people that vegans (or simply healthy eaters) aren’t aliens and that healthy eating can be delicious, is to show them with food! Choose your favorite healthy treat or green appetizer to make and bring to a summer barbecue or birthday party so that you can eat your cake and have it, too. All those jokes will disappear once vegan chocolatey goodness is in the picture.

2. Keep it short and sweet. People who are unfamiliar with the plant-based diet and holistic lifestyle will ask questions. Be sure not to transform into your old high school biology teacher and go into a 30 minute spiel about the benefits of kale and the history of coconut oil. Instead, stick with a brief answer to the ever-popular question of why you live the way you do. I usually say with a smile, “It makes me feel great and brings me happiness. I just like to feel my best!”

3. Have a few tricks up your sleeve. If the joking continues, pull out some of your own. Making sure not to judge or offend, think of cheeky ways to throw a question back onto someone who may be grilling you about your particularly green dinner plate. “I’m actually trying to see if my body starts sprouting leaves, thanks for noticing!” “I’m in a competition with my pet rabbit to see who can consume more raw carrots within a day. I’ll keep you posted on my progress.” “When the rest of the world zigs, I zag. You should really try it.”

4. Extend open invitations. Especially when vacationing with friends or living with roommates, sneaking away to the gym can frustrate people who either aren’t on top of their fitness game or who want to spend time as a group. Instead of waking up at the crack of dawn to fit in your workout before everyone else’s day starts, make a suggestion for the group to rent bikes or play beach volleyball. Your dedication to fitness shouldn’t be overruled by your peers, but asking them to join in is a win-win situation. A dance party is a wonderful disguise for a cardio without…

5. Go all out with a plant-based feast. If your siblings, boyfriend, or business partner are still on the fence about your obsession with raw veggie collard wraps, pull the final trigger an invite them over for 3-course vegan or plant-based meal to wow them. For brothers or boyfriends who frequent Buffalo Wild Wings and Taco Bell on a weekly basis, try Alicia Silverstone’s 7-layer dip; they won’t know what hit them. For your mother or sister and their sweet teeth, try any of Chocolate Covered Katie‘s cookie, cake, or pie recipes-most are sugar and fat free. For the culinary connoisseur, prove just how dimensional veganism can be by slaving over any of these gourmet raw recipes, and be sure to kill the presentation.

These tricks won’t have anyone running away from you, and may even open some doors to more willing eaters.

How Safe is Your Skin and Haircare Routine?

By: Natasha Uspensky, CHHC

How Safe is Your Skin and Haircare Routine? | The Organic Beauty Blog

For many of us, our skin and haircare routines are habits we stick to like glue.  We find products we love, and we remain loyal to them for years.  But what if your trusted skincare go-to’s are doing more harm to your body than good?  Our health is most impacted by the things we do regularly — foods we eat every day, products we use everyday, behaviors we partake in everyday.  Those are the things that add up and have measurable effects that can either lead to a longer, healthier life, or a higher risk of disease, reproductive issues, and even psychological or mood imbalances.

So how do your products add up?  Is your skin soaking up healthy, nutritive ingredients, or is your skin a sponge for harmful chemicals that are finding their way into your bloodstream?  For example, did you know that CoverGirl mascaras, Blistex lip balms, Neutrogena face washes, Banana Boat suncreens, Biolage shampoos, and Lubriderm moisturizers all got some of the highest scores for toxicity and health hazards? {Tweet it!}  These are brands millions of Americans use everyday, none the wiser that they are exposing their systems to carcinogens, endocrine disruptors, organ and reproductive toxicity, and more.

So what can you do?  First of all, get really familiar with the most toxic ingredients, and avoid them like the plague.  (Check out 5 Skincare Ingredients to Avoid for a few of the top big bads).  Second of all, search the Environmental Working Group’s Skin Deep Cosmetics Database for each and every one of your products.  If any product has a score over 3, (yes 3!) toss it!  It’s just not worth the risk!

Still confused about what is safe to use?  Skin Deep’s searchable database gives you tons of options for the safest, healthiest products, as well as information on where to buy them.  Some of these products are even available at your local pharmacy or big box store.  Convenience or brand loyalty are just not good enough reasons to continue exposing yourself and your family to harmful toxins.  And until our government regulations for cosmetics catch up with the science of safety, YOU are in charge of making sure you’re buying and using the safest products possible!

The EWG is working on a mobile app for Skin Deep, so you can check out a product’s safety on the go!

Donate $10 or more today so EWG can put critical information about cosmetic safety right at your fingertips. They need $45,000 by July 15 so they can deliver this smartphone app to you by September.

A New Snack to Bug Out On

By Callie McBride

A New Snack to Bug Out On | The Organic Beauty Blog

It’s no secret that the world population is continually on the rise. Just look at any Starbucks on a Monday morning, the 4 train on a weekday at 5:30pm, or even your local DMV. In all seriousness, the world is constantly expanding, which calls into question how accommodating our planet is to such growing numbers. As plants, animals, and the nearly 7.1 billion people on this earth currently share worldly resources, the prospect of more of each becomes daunting. How will we feed and nurture all living things on planet Earth 10 or 20 years from now, when we struggle to do so today?

There just may be a solution, but its a little buggy. According to the Food and Agriculture Organization (FAO), entomophagy, the practice of eating insects, could be the answer to our food supply worries. In fact, they estimate that currently 2 billion people in the world already munch on insects as part of their daily diet: fried locusts in Thailand and beetle larvae in Australia, for example. Okay, if that grossed you out, don’t worry. Think of it as less of a scene from “Survivor” and more of an off-beat but healthy snack, like Seaweed Snacks.

In the newest information pamphlet, “Edible Insects: Future Prospects for Food and Feed Security”, constructed just this year, the FAO of the United Nations is crediting edible insects for their nutritional value, environmental impact, economic improvement, and betterment of livelihood throughout the world. The FAO states that locusts contain loads of iron, even more so than beef. Eating insects could also positively affect our environment, as insects require only 2 pounds of food to  make 1 pound of bug meat, a huge difference from the 8 pounds of food that cattle need to make 1 pound of meat. This means more food for everyone!

If you still aren’t convinced, think of our funky food history. As humans, we went from eating real and wholesome foods like fruits and vegetables from the earth, to highly processed and refined white foods such as bread, cheese, and sugar. A healthy take on food is certainly back on trend, with an emphasis on all natural and organic foods grown straight from the ground. Those carrots you love to munch on were picked out of soil, and so would a grasshopper, should such an item fall into your palate!

The trend, which may seem strange, isn’t all that new. San Francisco restaurant La Oaxaquena serves up toasted grasshoppers, known as “champulines“, and the Audubon Insectarium in New Orleans offers insect cooking demos and tastings-mealworm salsa, anyone?

This new global topic may open the doors to controversy, as people with food allergies or preferences may not stomach the idea. For instance, how would a vegan approach the prospect of eating insects? Does she set them apart from animals, or group them all together? Moreover, would a health-conscious person only be struck with eating insects that have been deep-fried and salted? There are many questions that arise with such a lofty proposition, but we can certainly expect answers as the need for food security continues and a solution is sought after.

For more information, visit FAO.org and search “edible insects”.

Do’s and Don’ts For a Killer Online Dating Profile

By: Natasha Uspensky, CHHC

Do’s and Don’ts For a Killer Online Dating Profile | The Organic Beauty Blog

I’m going to be honest, I’m a big fan of online dating.  Living in New York, a city that is notoriously difficult for dating, I found myself timidly dipping toes into the lukewarm waters of internet romance after a few years of absurd pickup lines in bars, and unsuccessful setups from friends.  I was instantly hooked.  It’s like shopping!!  For boys!!  The ability to peruse and pre-screen, to read about how someone characterizes themselves, and then exchange some pithy emails before meeting up had an air of excitement, and helped me feel more in control of my dating scene.

Perhaps the best thing that can come out of online dating is getting super clear on what/who you’re looking for.  You quickly learn that “good on paper” does not always equal perfect in person.  A few dates in, you’re forced to really home in on what works for you and what doesn’t, which is an excellent journey in self-discovery.

I met my true soulmate, the love of my life, and my now husband on OkCupid, so yeah, I’m a believer.  But having a successful online dating experience requires some effort, introspection, and yes, even some skill.  Read on to find out how to craft the perfect profile to attract exactly what you’re looking for — whether that be a super fun date, a casual relationship, or your one true love.

DO Get clear on what you’re looking for

If you’re a serial monogamist looking for a serious relationship, coming off as all casual and devil-may-care is not going to land you a good match.  Likewise, if you’re really just looking for some casual dating, detailing your long-term life plans in your profile may send the wrong message.  Do some soul-searching, and identify what kind of relationship you are looking for right now.  Don’t be afraid of honesty in your profile.  Without going into too much detail (recent breakups, relationship cynicism, and tiny violins are all best left out of your profile), feel free to state exactly what you want!  “An awesome guy for some summer fun,” or “A fly lady for some great dates and conversation” sets a casual tone without making you seem like you’re just looking to hook up.  Whereas the more relationship-inclined could state that they’re “Looking for the Clyde to their Bonnie” or just straight up say “Definitely not into one-night-stands.”  Either way, say it in your voice, and have it reflect your truth, but try not to go overboard in either direction (see below).

DON’T Come off as sleazy, shallow, or desperate

Stating what you’re looking for has it’s limits.  Unless you’re looking for Mr. Sleaze Bag, avoid terms like “casual sex” or “missing piece,” which can send quality dates running.  “Must have nice body” is a first-rate douchey thing to say… Instead opt for language that conveys your love for fitness and an active lifestyle, and a desire that any match share the same.

DO Let your personality show through

Are you quirky? Funny? Dry? Sarcastic?  These are aspects of yourself that are going to come out pretty quickly once you’re talking with someone, so there’s no point in masking them in your profile.  You’re looking for someone who appreciates and is actively seeking those qualities!  So let them shine!  Are you a sci-fi nerd?  List some of your favorite books and movies.  An intellectual?  Make some obscure references that only a true kindred spirit would get, if that’s what you’re looking for.  Remember, your dating profile is a representation of who you are, not a glossy advertisement of who you wish you were.  Don’t worry about coming off as cool or as a dream boat… The more accurately your depict your true self, the more satisfying your dates will be!

DON’T Lie or stretch the truth, in words or in photos

If you’re 5’10 1/2, don’t round up to 6 feet.  If you’re unemployed, don’t make up a career.  If you are divorced with a kid, don’t gloss over those details.  If you live with roommates in Brooklyn, photos of you in a swanky Midtown high-rise send the wrong message.  If you’re a few pounds heavier than your ideal weight, don’t post photos from your skinny college days.  Your date will find out the truth eventually, and coming off as inauthentic in your profile shows that you don’t think the real you is good enough, so why should your date??

DO Pick some awesome photos that reflect who you are

It’s online dating after all, so your photos do count for a lot.  Spend some time picking your best recent photos that really show aspects of your life and personality.  Pick at least two close-ups, a full-length, and maybe an activity shot, all of which put your best face forward.  If you don’t have any good photos, grab a friend with an artistic eye and head to the park for a little photo shoot!  Highlight your best features, like your eyes or your smile, and let your personality shine through!  If you’re a high-energy, fun person, choose photos of you laughing or sporting a great grin.  If you’re a more serious, shy type, it’s perfectly fine to choose an artsy photo with a demure smile.  If you’re looking for a relationship, photos of you doing a keg-stand or on a pub-crawl with your posse send the wrong message (and are just generally best avoided).  If you’re a casual, jeans and t-shirt kind of person, photos of you all dressed up at a friend’s wedding aren’t going to be an accurate reflection of who you are.

DON’T Pick blurry, group, or barely clothed photos

Seriously, no one needs to see your abs or your cleavage in your profile, unless of course you’re just looking to hook up.  Group photos are confusing and way too open to interpretation (seriously, she hangs out with guys like that?).. You don’t need to prove how popular you are.  Blurry, dark or unclear photos make it seem like you’re hiding something, which doesn’t send a good message.  If you want to throw in a dark or moody photo that may not offer the best view of your face, make sure the rest of your photos are more clear. Remember, if all you have are photos sub-par photos like this, take the advice above and go for a little photo shoot!

DO Pick the right dating site for you

Picking the right dating site can mean the difference between a tortured and miserable online dating experience, and one that is super fun and fantastic.  OkCupid is a free dating site which has the most volume, making it great for casting a wide net.  You may also want to check out some great, niche, city-specific sites.  Want some great, active dates?  HowAboutWe is for you, creating dates for you based on shared interests and experiences. Sparkology is a paid dating site for NYC-based young professionals who have graduated from top universities.  Prefer to tap into your extended social network for dates?  Try Swoon, an app that let’s you flip through potential matches with emphasis on shared contacts and interests, which you can “like” or “pass.”  If the “like” is mutual, you both get contacted, eliminating the rejection factor.  Older singles may have more luck on Match or OurTime.  More conservative or religious singles may want to check out EHarmony or JDate.

Organic Beauty on the 4th

By Callie McBride

Independence Day is here!

Backyard barbequing, boating on the lake, sitting poolside with friends, or marching through a parade; whatever tomorrow’s festivities bring, we have 5 organic beauty tips that will fit right in with all the fun and fireworks.

1. Classic Red Lip

courage3Vapour Organic Beauty’s new Siren Lipstick “Courage 406” is perfect for the 4th. Its made with 70% organic ingredients and 30% of essential vitamins and minerals. $22, www.vapourbeauty.com

2. Electric Blue Nails

Vapour’s Vernissage Nail Laquer is non-toxic, cruelty-free, and paraben-free, boasting only of natural and safe ingredients to give your nails a gorgeous sheen. Try “Ether 524” to add a pop of blue to your look.

3. Festive Hair Accessory

Whether you’re in hot and humid New York, sunny California, or anywhere in between, it’s gonna be a hot one. Ditch the hair straightener/curler, opt for natural wave spray (Josie Maran makes a great organic version), and add in a fun red or blue accessory to beat the heat and stay stylish. We love that this Marc by Marc Jacobs hair pin comes in the two holiday colors, red and blue.

4. Beer Alternative

Not to ruin anyone’s fun, but beer, a widely popular drink on the fourth of July, can often lead to bloating, stomach pains, and general discomfort, especially those that contain gluten. If you plan to sip throughout the day, you may as well do it the right way! Enter Kombucha, the best and most beneficial alternative to beer; its fizzy, delicious, and cleanses your system with each gulp.

5. A Vegan Treat To Share

Possibly the most exciting accessory to your fun fourth, here are some simple ideas for snacks to bring to the party: strawberry + blueberry skewers; raspberry + coconut yogurt parfaits; watermelon slices; red, white, and blue homemade popsicles using crushed berries and soymilk; the list goes on!

Make sure to pack enough water, sunscreen, and snacks for the day. Slap on that red lip, wrap up your healthy treat, and have a safe 4th of July!

7 Ways To Combat Stress

By Callie McBride

Let me fill you in on a secret-I had one of the most stressful days of my life last week. Let’s just say leaving your phone in a cab, trekking it to an AT&T store in a downpour sans umbrella, while simultaneously dealing with unwelcome house critters -in the New York City humidity- doesn’t do a body good.

The worst thing you can do to remedy stressful times is to ignore your body and mind’s needs and shuck them aside for a later time. When stress creeps into your life, as it always does, its imperative for a healthy lifestyle to deal with it properly. How is this possible, when all you want to do is pull your hair out and shut off your brain for the day? I think I may have a pretty successful formula.

7 Ways To Combat Stress | The Organic Beauty Blog

Here are my 7 steps to combating stress and maintaining peacefulness throughout your day:

1.) Always find a silver lining.

Believe in the power of positivity, and find the good in your situation. It could be anything from the weather, to an upcoming TV show, to your Twitter or Instagram feed. While I was soaking wet and getting more frustrated by the second buying a new phone, I kept thinking of my plan to crawl into bed and watch Girls on repeat that night (which I did, thankyouverymuch). Remember, your mind is the ultimate tool to changing your attitude and taking the focus off of whatever is causing you stress.

2.) Write out a list.

This one never fails. If you aren’t a constant list-maker, this may feel strange at first, but I find that writing things out always helps to alleviate stress. Schedule out your day or week, write out a to-do list, or even map out a list of things you want to accomplish. Getting thoughts out of your head and onto paper can release anxiety by simply changing a mental breakdown into a visual reference. Plus, its an excuse to buy an adorable notebook or notepad!

3.) Talk things over.

Tread lightly with this one, for you don’t want to turn a friend or significant other into an unwilling therapist. Still, finding someone who will listen to your problems, and even reciprocate with their own issues, can be extremely detoxifying, if you will. Here’s my cheeky go-to line: “So I need ten minutes to vent. What’ll it be, coffee or tea?” Your friend may just listen politely, or may try to offer advice. If you can find a confidant to rant to, be open to that advice! A second opinion or viewpoint is always helpful to find a solution to a complicated matter. Either way, talking out your problems out loud, similar to making lists, is stress-relieving in itself; often times you will end up seeing a new perspective as you are forming the words.

4.) Make an emergency “happy” kit.

Mine looks like this: Dark chocolate w/ sea salt, GIRLS on HBO, candlelit yoga or meditation, a long solo walk, the song “Safe and Sound” by Capital Cities, and a hot bubble bath. This one’s easy. Keep a handful of “favorites” on hand to lift your spirits and calm your nerves. Call it Insta-peace!

5.) Consider the Big Picture.

When things aren’t going your way, its never productive to dwell over it and wallow in sadness. One way to beat that easy trap is to think about things from a different, much wider perspective. If work troubles have you upset, remember your career goals; if a relationship is on the rocks, remind yourself of your values and your commitment. It could be that your weight loss goals are taking longer than expected. Imagine yourself accomplishing those goals, instead of impatiently dwelling on the present, however frustrating it may be. Again, let your mind be your tool for peace!

6.) Take out the unnecessary.

Declutter, downsize, and decrease in order to de-stress. Declutter your home and work space, downsize any “stuff” that has accumulated in your home, and decrease any unnecessary time or effort into people or things that do not bring you a sense of fulfillment or happiness. In stressful times, you don’t need to extend yourself beyond what’s manageable, which means that an unreliable or unpleasant friend shouldn’t take up your free time.

7.) Enlist the help of Youtube.

If all else fails, head to youtube to cheer you up. We’ve all done it: hopped online “for 2 minutes”, landed upon a funny Youtube video, and spent the next 45 minutes searching and enjoying plenty of others. No shame! Pure joy and laughter can erase stress in an instant, and if an adorable baby panda sneezing does it for you, more power to ya! I would suggest “I Knew You Were Trouble Goat”, “Sassy Gay Friend”, any laughing baby video, and go from there.

Soups: Your Quick and Easy Dinner Solution

By: Natasha Uspensky, CHHC

Soups Your Quick and Easy Dinner Solution | The Organic Beauty Blog

A light, delicious, vegetable-based soup makes the perfect dinner for encouraging healthy weight, quality sleep, improved digestion, and increased energy in the mornings.  Soups are easily digestible, which leaves your body primed for rest, detoxification, and rejuvenation while you sleep, instead of expending tons of energy on digesting a big meal full of slow-to-digest foods like animal protein and grains.  Plus, it is super easy to throw together a delicious, quick dinnertime soup that leaves you free to relax and enjoy your evening, without spending hours in the kitchen!  Cook a big pot for the week, and enjoy your freedom!

A super important trick for quick and easy soups is a good quality vegetable broth base.  My absolute favorite for a flavorful, delicious broth is Seitenbacher Vegetable Broth Powder.  It’s all natural, instant, and allows you to customize how strongly flavored you want your broth.  I use it for all of my soups!  Pacific Organics and Imagine Organics make ok ones too, but in my opinion, nothing beats the natural broth powder!

Your other tools for whipping up a dinner soup in no time at all are canned veggies.  Stock up your pantry with canned organic beans and canned organic tomatoes.  Other pantry staples include yellow onions, garlic, greens, and olive oil.

Chilled Cucumber Soup with Mint

By: Natasha Uspensky, CHHC

This delicious chilled cucumber soup is super detoxifying, and is a perfect light summer dinner for those balmy nights.  The pine nuts add some bulk and healthy fats, giving the soup a super yummy consistency.  Due to the high water content of cucumbers, this soup is also amazing for beauty, hydrating skin, and weight loss!

Chilled Cucumber Soup with Mint

Serves 2

Cooking time: 10 minutes

Ingredients:

3 cucumbers, peeled and chopped
1 lemon, peeled and cut into wedges
1/4 cup pine nuts
2 cups pure water
1/4 cup mint leaves, roughly chopped
2 cloves of garlic, roughly chopped
1 teaspoon sea salt
2 tablespoons olive oil

Directions:

Blend everything except fresh mint together until smooth — about 3 minutes in a high-speed blender. Add mint and blend for 15 seconds. Garnish with as extra drizzle of olive oil and a sprig of mint or dill.  Serve chilled with some rye toast.
